Knife stored between the 2 refrigerated maketables.

2 scoop handles were stored directly on the chips. Store handles off the food.
4-602.12 Clean food contact cooking and baking equipment at least every 24 hours.
Clean the cooks line equipment.
4-602.13 Clean non food contact surfaces as often as necessary to prevent accumulation of residue.
Clean the wire storage shelves in the back for clean equipment.
4-501.12 Surfaces such as cutting blocks and boards that are subject to scratching ands coring shall be resurfaced if they can no longer be effectively cleaned and sanitized, or discarded if they are not capable of being resurfaced.
Take corrective action on the surfaces of the green cutting board and the cutting board in front of hot serve line.
