3-501.16 Maintain potentially hazardous food at 135 F or above. Hot dogs being hot held under the warming lights. Hot dogs ranged from 120 - 149째F. Hot dogs located under the warming lights near the RI cooler/freezer did not meet temperature requirments. Those hot dogs were discarded prior to the end of the inspection.
2-402.11 Wear hair restraints that are designed and worn to effectively keep hair from contacting exposed food, equipment, utensils, linens, and unwrapped single service/single use articles. 2-303.11 Cease wearing jewelry on the arms and hands (other than a plain ring) while preparing food.
