KDA_3_50116A2 - --At the salad bar there was cut romaine salad at 44.5F. An employee said it was placed out around 10:00-10:30am. It was tempted around 11:36am (less than 4 hours). COS-the product will be consumed quickly during the lunch rush and what is left will be discarded. (Note: lunch starts at 11am and ends at 1pm).
KDA_3_50118A2 - --In the Traulsen RIC there were containers of sliced ham, sliced turkey and cooked diced chicken without dates. The cook said he sliced the ham and turkey and cooked the chicken in the morning around 9:00am on 1/19/16 (past 24 hours). COS-date marked all three items.
KDA_3_60311A - --There was no Consumer Advisory (disclosure or reminder) posted in the establishment. They cook to order eggs for breakfast. COS-left a poster.
KDA_4_20211A2 - --On a utensil cart there was one square plastic lid with a crack in it. On the hooks above the food prep table there were 2 rubber spatulas with deep cracks on the sides (not easy to clean). COS-discarded utensils.
KDA_4_60111A - --On a utensil cart there was one square plastic lid with tape left on it and stored clean. COS-peeled the tape off and moved it to the ware wash area. The large meat slicer had dried food debris on the blade and in between the crevices. The person in charge said it was not used today. COS-cleaned the slicer. In a utensil drawer there was one metal scoop with dried food debris on the inside and stored clean. COS-moved the scoop to the ware wash area.
KDA_4_90311B - --On the metal rack by the oven there were 4 metals sheet pans facing upwards and not covered. COS-inverted.
