    Comments: TWO PANS OF PULLED PORK WAS SLOWLY REHEATING INSIDE OF THE STEAM TABLES. PLACE PANS OF PULLED PORK ON THE FLAT GRILL AND REHEAT TO 165 DEG F PRIOR TO PLACING IT ON THE STEAM TABLES. ENSURE THAT THE WATER INSIDE THE STEAM TABLES IS HOT ENOUGH TO HOT HOLD FOOD AT 135 DEG F. CORRECTED ON SITE. OWNER STATES THAT THE FOOD HAD BEEN ON STEAM TABLE LESS THAN AN HOUR.
