12/6/2011 | Standard2 | HANDWASHING- No paper towels available at the hand wash sink in the upstairs serving area. Provide an adequate supply of paper towels to facilitate hand washing. Paper towels were provided during this inspection. COLD HOLDING- Shredded cheese on the upstairs serving line was stored at room temperature with an internal temperature of 63°F. Potentially hazardous foods shall be maintained cold at 41°F and below to prevent bacteria growth. Cheese was discarded during this inspection and employees will be educated keeping cold foods on ice. COOLING- Turkeys cooked the previous day were wrapped and in was in large portions. Turkey had an internal temperature of 53°F. Potentially hazardous foods shall be cooled rapidly from 135°F to 70°F within two hours and 70°F to 41°F for a total time of six hours. Foods shall be cooled in shallow portions or using an ice bath. Turkeys were discarded during this inspection. Pasteurized whole shell eggs are used for fried eggs. |
