  • *7.0 Observed a spray bottle with a blue chemical contained a worn label. Toxic chemicals shall be properly labeled to avoid confusion and misuse.
  • *3.4 Observed the sliced cheese (four varieties) on the top of the reach-in unit was holding at 43-48°F. Foods shall be maintained cold at 41°F and below to limit the growth of organisms. Discussed to remove card board container holding the cheese. Discard food items holding at 45°F and above.
  • 4.8 Invert the storage of plastic containers to prevent the contamination of food contact surface.
  • R/4.4 Observed a torn door seal on the top door of the upright freezer, and on the counter unit. Replace this. Reportedly these gaskets were ordered and will be replaced this week.
  • 6.2 Replace the burned out light fixtures above the sandwich line and above the three-vat sink.
  • 4.5 Clean the soiled, stained door seal on the walk-in cooler.
  • 4.3 Repair the soiled/damaged caulk at the wall/three vat sink juncture, to provide a cleanable surface.
  • 4.0 Remove the paper lining the shelf under the drying table to provide a cleanable surface.
  • 6.1 Provide a shatter proof bulb in the display case with the turnovers.
  • 6.4 Clean the floor and wall unit behind the fryers which contains grease accumulations.
  • 6.4 Repair the damaged wall stripping under the front counter to provide a cleanable surface.
  • 6.4 Store the employee coats in a separate designated area from the pop syrup rack, to prevent contamination.
  • Note: Discussed complaint with the PIC, received by this inspector on 3/13/12. Reportedly an individual was handling their hair in the food preparation area on the evening of 3/9/12. Discussed hand washing after touching hair or face.
  • Observed the heat treatment log today.
  • Discussed the door seal on the Pepsi unit currently under for storage must be repaired prior to using this unit as a refrigerator.

  • 6.2 Replace the burned out light in the walk-in freezer.
  • 4.1 Provide a thermometer in the reach-in cooler on the cook's line in order to monitor the ambient air temperature. Ambient air temperature was properly below 41°F today.
  • -One accurate digital thermometer available for use.
  • -Ham, cut tomatoes, and turkey were cold holding properly below 41°F.
  • -Roast beef and chicken were hot holding properly above 135°F.
  • -90+ days of the heat treatment log were available.
  • -Observed proper date marking throughout.

  • *4.4/3.4 Observed the walk-in cooler ambient air temperature at 47°F. Potentially hazardous foods (PHFs), that were not partially frozen, were cold holding between 43°F-47°F. Repair company is in route to the operation to make repairs. Fax a completed work order to MCHD. Recommend relocating PHFs to the walk-in freezer until repairs are made.
  • 4.5 Observed ice build-up on the condenser line the walk-in freezer. Repair this and keep food protected from possible contamination.
  • 6.1 Provide a light shield for the lights above the cups in the dry storage area.
