- 3.4/4.4- Hamburgers on grill line in refrigerated base were between 43°F-42°F. All other foods in the unit were below 41°F. Front waitress cooler holding at 47°F and only food in unit was whipped butter on ice at 47°F. Maintain potentially hazardous foods cold at 41°F and below. Hamburgers and butter were discarded.
- 6.4- Floor under equipment on grill line has food debris build-up. Clean the floor more thoroughly.
- R4.5- The shelf under the flat grill and next to upright freezer has food debris build-up. Clean this equipment.

- F and below. The pies were discarded.
- 4.4 The ambient air temperature in the pie cooler was 52 degrees F. Coolers shall be able to hold PHF's at 41 degrees F and below.
- 4.4 The door seal on the egg cooler is torn. Replace this. Equipment shall be in good repair.
- 4.5 The following areas are soiled:
- R- observed grease accumulation on the sides of the fryers
- R- observed grease accumulation below the flat grills on the platform
- - observed soil/grease accumulation on the outside of various equipment
- - observed blackened dust build up on the walk-in cooler fan covers
- Clean these items at a frequency to prevent soil/grease accumulation.

- Clean these items at a frequency to prevent soil/grease accumulation.

- 6.4 The floor edges in the dry stock room. Clean these areas.
