- Foods and refrigeration units shall be maintained at 41°F and below, to limit the growth of organisms. Recommend to discard food items holding above 45°F and above. The defrost cycle was adjusted today and the deli case was holding at 38°F.
- *3.4 Observed the Garlic Bologna was dated 7/19 and 8/1. Foods shall be dated the day of opening and shall be used or discard in seven calendar days. Properly date or discard these items.
- 5.1 Repair the leaky three vat sink faucet. Repairman was on-site today to order parts.
- 6.4 Clean the floor under the walk-in cooler racks which contains a spill.
- 6.2 Provide 10 foot-candles of lighting in the walk-in cooler, currently 7 foot-candles

- *3.1 Observed a can of kidney beans dented on the top seam. Packages of food shall be in good condition to protect the integrity of the contents and to prevent potential contaminants.
