  • *7.2 Observed motor oil stored with aluminum foil on the rear storage area. Toxic chemicals shall be stored in a separate designated are from food and equipment. Relocate the motor oil.
  • 6.4 Wood floor surface by the front door, behind the deli case, and in the retail area was damaged/uncleanable or grooved.
  • Repair these areas or provide rubber or cleanable mats.
  • 4.4 Repair the damaged door seal on the first and last door of the walk-in cooler display doors with bottled wine and wine coolers.
  • 6.4 Repair the ceiling surface in the beer walk-in cooler to provide a cleanable surface.
  • 6.1 Provide light shields on the light fixtures in the walk-in coolers to prevent contamination.
  • Note: Additional light switch is available in the walk-in cooler with beer products to maintain 10 foot-candles of lighting.
  • Discussed non-commercial equipment and crock pot use. Equipment must be commercial grade.

  • *3.4 Observed the deli case contained and air temperature of 46°F and foods in the deli case such as but not limited to were holding at improper temperatures: - Muenster cheese 50°F, and 51°F, - Farmer cheese 49°F
  • - Cajun turkey breast 42°F - Liver wurst 46°F - Roast beef 52°F, 53°F - Swiss cheese 56°F
  • - Garlic Bologna 43°F - Provolone cheese 49°F - Bologna 46°F - Tomato 52°F
  • Foods and refrigeration units shall be maintained at 41°F and below, to limit the growth of organisms. Recommend to discard food items holding above 45°F and above. The defrost cycle was adjusted today and the deli case was holding at 38°F.
  • *3.4 Observed the Garlic Bologna was dated 7/19 and 8/1. Foods shall be dated the day of opening and shall be used or discard in seven calendar days. Properly date or discard these items.
  • 5.1 Repair the leaky three vat sink faucet. Repairman was on-site today to order parts.
  • 6.4 Clean the floor under the walk-in cooler racks which contains a spill.
  • 6.2 Provide 10 foot-candles of lighting in the walk-in cooler, currently 7 foot-candles
  • Note: Pop tarts contain a sell-by/use-by date of 4/1/11, Betty Crocker Super moist Cake mix 7/26/11, Betty Crocker 7-layer bars
  • 7/25/11, Betty Crocker Turtle Bars 7/22/11. Check and rotate stock regularly.

  • American cheese 46°F, Colby 44°F, marble cheese 45°F, Pastrami 44°F, Roast beef 45°F, and bologna 43°F. Maintain foods at
  • 41°F and below to limit the growth of organisms. Recommended to adjust this unit.
  • *3.1 Observed a can of kidney beans dented on the top seam. Packages of food shall be in good condition to protect the integrity of the contents and to prevent potential contaminants.
  • *7.1 Observed motor oil was stored with Spaghetti O's in the rear storage area. Store toxic chemicals in a separate designated area from food and equipment.
  • R/4.5 Clean the interior of the cabinets and drawers, and the shelf storing the bottled water which were soiled or dusty.
  • 6.4 Clean the floor wall junctures throughout as needed, and the floor under the walk-in storage racks, which contains spills.
  • 4.1 Reportedly, operation is cooking in a non-commercial roaster. Provide commercial grade NSF equivalent equipment.
  • 6.2 Repair the non-functioning light fixture in the walk-in cooler, to provide ten foot-candles of lighting.
  • Note: Observed three boxes of scallop potatoes with a sell-by, use-by date of 7/20/10. check stock regularly and remove expired products from the sales floor.
