12/15/2011 | Standard2 | DATE MARKING- Deboned chicken had a discard date of 60 days. Deboned chicken is frozen then thawed the following day. Chicken needs to be dated when removed from freezer to indicate the seven day consume by date. Discussed this with manager.
One accurate long stem digital thermometer available for use.
Chicken is reportedly reheated to 165°F in the microwave.
Chicken is cooled in small portions and frozen.
All chemicals were properly labeled and stored.
All raw chicken stored separate from ready-to-eat foods.

- R6.4- Wall near back garbage can and behind ice maker has grease build-up. Clean this.
- R6.2- Replace the burned out light on the cooks line.
- 4.4- Replace missing hood filters.
- 4.4- Ambient air temperature of glass door cooler is 44.9°F. Coleslaw in unit 40°F. Monitor cooler that it maintains 41°F and below.
- R4.4/4.5- Door on walk-in freezer is damaged and reportedly in the process of being replaced. Door does not close completely and a large amount of ice has built up in the freezer. Replace door and remove ice accumulation.
- 4.5- Clean the unused glass door display case.
- 3701-21-02- Current food license could not be located. Display current license at all times. Duplicate license will be issued.
- 4.4- Gaskets on walk-in cooler are starting to tear. Equipment shall be in good repair.

- Maintain potentially hazardous foods at 41°F and below. Make any necessary repairs and discard any contaminated foods.
- Reportedly manager was doing inventory. Walk-in cooler at 38°F at the end of the inspection.
- *4.4- None or <200 ppm QAC residual in the wiping cloth bucket. Maintain sanitizer at 200 ppm to effectively sanitize food contact surfaces.
- R6.4- Floor including floor and wall junctures throughout have food debris build-up mostly on fryer line and in storage room. Walls in storage room and back above oil storage is dusty/dirty. The ceiling throughout is soiled and/or peeling paint. Clean and/or make any necessary repairs.
- 6.4- Caulking on the wall above chicken preparation is hanging off of the wall. Repair or reseal this area to prevent possible contamination and to facilitate cleaning.
- 4.5- Hot holding drawer edges and shelving with spices are soiled. Clean this.
- 4.4/4.5- Freezer door is not completely closing due to ice. Clean area so door can completely close.
