  • A telephone complaint was received by this office regarding the above operation. Reportedly tables are not cleaned and a resident vomited in the kitchen. Tables were clean during this inspection and a sanitizing bucket was available for cleaning tables.
  • Reportedly no residents have vomited in the kitchen. Staff was aware of the complaint. See critical control point inspection for other violations and notes.
  • C6.3- Employee bag stored on shelving with bottled water in the storage room. Discussed relocating employee storage area to a bottom shelf separate from food and single-use items to prevent possible contamination.
4/5/2012Standard 1COOLING- Scallop potatoes from previous night at 42.9°F. Potatoes were in a larger portion with the lid and some condensation on top of the lid. Discussed cooling with lid off and not stacking on top of other food containers. Potentially hazardous foods shall be cooled rapidly from 135°F to 70°F in two hours and 70°F to 41°F for a total time of six hours.
Scallop potatoes were discarded.
Digital long stem thermometers available for use.
Observed good hand washing practices and single-use gloves used by staff.
Chemicals were properly stored and labeled.
  • R/6.4 Repair the damaged wall surface above the scrap sink in the dish area, wall surface behind the hand sink, interior of the cup cabinet, wall surface above the 2-vat sink, to provide cleanable surface.
  • 6.2 Provide 10 foot-candles of lighting in the storage area, currently 5-6 foot-candles.

Menu was reviewed today. Requirements for a highly susceptible population are being followed.
Observed a dented canned good rack.
Discussed the reheating with PIC during this inspection. Food shall be rapidly reheated to 165°F and above within two hours. The hot box/warmer can also be used to reheat soup. Chicken noodle soup was reheated to 212°F within 1.5 hours during this inspection.
Foods were observed cooling in shallow portions while under refrigeration. Reportedly foods area also cooled in an ice bath.
  • R/6.4 Repair the damaged wall surface above the scrap sink in the dish area.
  • C/*4.5/4.6 Wash, rinse, and sanitize, the food chopper which contains food debris.
  • 4.5 Clean the shelves in the walk-in cooler which is soiled or contains a mold-like growth.
5/4/2011Standard 1C/DATE MARKING: Cream of chicken pasta was date marked 11/28/11. Foods shall be dated the day of preparation and shall be used or discarded in seven calendar days. This food was properly dated today.
