- *2.3 Observed PIC touch pizza to assure product was cut properly with their bare hands. PIC shall use gloves when handling ready-to-eat foods.
- R/6.4 Repair damaged wall tiles in the kitchen area, to provide a cleanable surface.
- 4.5 Clean the bottom of the oven which is soiled.
- 4.4 Resecure the interior of the lid on the milk refrigeration unit which is unscured.
- 6.4 Clean the wall surface by the hot holding box, which is soiled or stained.
- 3.2 Provide a food shield or means to protect the food from contamination of children.
- Notes: Hungry Howies Pepperoni pizza was holding at 165°F, cheese pizza was holding at 167°F and 164°F, and salad was received at 56°F. This inspector will verify with RFE when salads are prepared.
- Lunches are served at 11:30am, 12:00pm, and 12:30pm.

- Observed the operation added a True refrigeration unit model number T-72, and True freezer unit model number T-49 both with

- R/4.5/4.4 The Traulsen freezer is non-functioning. Equipment shall be maintained in a state of good repair. Also clean this unit.
- 6.4/4.4 Repair the ceiling in the storage room with the freezer, the rusty shelves in the Traulsen unit, damaged wall tiles in the kitchen area, to provide a cleanable surface.
- 4.1 Observed the cheese sauce was heated in a non-commercial roaster. Equipment shall be commercial grade or NSF approved.
- Notes: Corn dogs were holding at 175°F, and cheese sauces was holding at 140°F.
- Observed cold water was barely functioning at the hand sink, which meant hand washing was impossible with extremely hot water. Make necessary repairs.
