  • *3.4/3.3 Observed the meatballs were holding at 147°F, in the steam table after reheating. PIC was not sure if 165°F was reached during the initial reheating. Foods shall be rapidly reheated to 165°F and above within 2 hours to limit the growth of organisms. PIC was asked to reheat this item up to 165°F, but was reportedly going to discard them. Be advised this operation is approved to reheat one food item once a week under the current risk level.
  • *3.4 Pepperoni was dated 12/26/11. Foods shall be dated the day of opening and shall be used or discarded in seven calendar days. PIC intended to properly redate this food item.
  • *4.5/4.6 Wash, rinse, and sanitize the pop nozzles, and surrounding areas which are soiled. Food contact surfaces shall be clean to sight and touch.
  • R/6.2 Provide 20 foot-candles of lighting in the restrooms currently 10 fc in the men's restroom, to provide lighting requirements in OAC 3717.
  • R/4.1 Provide thermometers in the make table, and the walk-in cooler. The thermometers in the walk-in cooler were inaccurate, and the reach-in unit was lacking a thermometer, but the units were holding at 35°F and 40°F, respectively.
  • R/6.4 Repair the damaged floor tiles throughout as needed to provide a cleanable surface.
  • 6.4 Repair the damaged base cove by the mop sink, and damaged wall strips on the door way entering the rear preparation area, to provide a cleanable surface.
  • 4.0 Remove the paper lining the drawer, to provide a cleanable surface.
  • 4.5 Clean the cabinet under the pop dispensing machine.

  • *2.4/5.1 Observed soiled knives were stored in the hand sink. The hand sink shall be accessible to promote proper hand washing. Recommended to provide a container for soiled utensils and to wash these utensils at least every 4 hours.
  • *3.4 Observed the following foods and refrigeration units were holding at improper temperatures:
  • - Chopped steak 44-45°F - Ham 44°F - Roast beef 44°F - Meatballs 112-117°F - Chicken strips 44°F
  • - BBQ pork 46°F - Pepper Jack 44°F - Seafood Salad 45°F - Sliced tomatoes 45°F & 47°F
  • - Cold cut lunchmeat set 45°F - White American cheese 43°F - Chicken teriyaki 43°F
  • - yogurt 53°F - Milk 52-53°F - Beverage cooler with milk products 50°F, air temperatures
  • Foods and refrigeration unit shall be maintained at 41°F and below to limit the growth of organisms. PIC adjusted the refrigeration units and properly reheated the meatballs to 165°F. Recommend to discard food items holding above 45°F.
  • R/6.2 Provide 20 foot-candles of lighting in the restrooms currently 4 fc in the men's restroom, and 4-5 fc in the women's restroom, repair the light fixture by the walk-in cooler, 6 foot-candles of lighting walk-in cooler, and 4-5 foot-candles of lighting in the walk-in freezer, to provide lighting requirements in OAC 3717.
  • 4.1 Provide inaccurate thermometer in the Coke cooler, and the walk-in cooler. Both thermometers is reading in the twenties, but the units were holding at 50°F and 37°F, respectively.
  • 6.4 Repair the damaged floor tiles in the rear storage area, and by the oven unit, to provide a cleanable surface.

  • 4.5 Clean the cabinet under the beverage dispensing machine, the bins lined with grates used to store the lunch meat, and counter under the pop dispensing machine.

  • 6.4 Observed base cove under the three vat sink was unsecure. Repair this.

  • 3.4 Observed the reach-in cooler contained an air temperature of 42-44°F, roast beef, salami, pepperoni, and turkey in this unit were holding at 43-45°F, also the cold table contained an air temperature of 41-44°F and the white cheese, provolone, pepper jack, cold cut, steak, ham, sausage, chicken, tuna, this unit were holding at 43-48°F. Foods and refrigeration units shall be maintained at 41°F and below. Recommend to discard any food items 45°F and above. Provide this office with a repair invoice.
