Cloths being stored on counter, not in proper sanitizer colution. (repeat violation) Instructed worker on preparation of Cl sanitizer at 100 ppm. Cloths to be immersed continuously and sanitizer must be available when any prep work/cooking is being done. Worker prepared sanitizer. Corrected 5E: At approximately 2:40 pm, Vulcan cooler was temped at 52F using inspector's calibrated thermometer. Chicken wings (2 large pans - had been frozen and placed in cooler to thaw) were found at 44F with inspector's calibrated thermometer, and were moved to <45F walk-in cooler. All other foods (commercially prepared dips and dressings) were deemed not potentially hazardous. Advised that no potentially hazardous foods be kept in this cooler until repaired to operate <45F. 15A: Walls, floors, near cooking area show grease buildup. Floors in back walk-in freezer and cooler are dirty. 10B: Cardboard used to line shelving in kitchen and walk-in cooler in back room.

Food was there from the night before. 8A Onions & raw chicken in box found stored on floor of rear walk-in cooler. 11C Microwave oven not cleaned after use, food debris present. 11C Slicer was not cleaned after use, food debris present. 12C Standing water on floor next to rear walk-in cooler. 12A No hot water available at 3-bay sink. 11D Chicken blood pooled on floor of Vulcan refrigerator 10B Floor in back room has worn paint and is not easily cleanable. 10B Formica on prep counter in front is broken in spots with pieces missing. 11A Continental ""cooler/cold hold"" unit is not functional. No food products were stored in it at time of inspection. 11D Pizza sauce splattered on white wall behind table across from walk-in cooler.
