Monitoring thermometers available in refrigerators used to store potentially hazardous (TCS) foods. Discussed proper use of plastic gloves and utensils to eliminate direct bare-hand contact with cooked and ready-to-eat foods with kitchen staff. Also discussed routine calibration of numerical thermometers which are used to check cooked potentially hazardous (TCS) foods. Also discussed routine hand washing with kitchen staff.
