03/26/2015 | Inspection | Discussed the deficiencies with the operator. A tray of egg salad and ham sandwiches were temped at 9:42 AM and found to be between 51 and 54 degrees F. Discussed this matter with the operator and she said that these items were placed in the cooler about 5 minutes previously. They were made from food items removed from the Walk-In Cooler (except for the bread) and will either be consumed within two hours or discarded after that time. The following food temperatures were measured (degrees F): On the Serving Line - First Tray of Chicken and Gravy - 194.4, Second Tray of Chicken and Gravy - 193.6, and Tray of Cooked Peas - 201.8. Bowl of Tuna Salad in Reach-In Cooler - 47.8 degrees F. The Rinse Temperature on the Dish Washer was 174 degrees F. Report e-mailed. |
