Cooling logs were available for a limited number of items during the inspection, please document cooling for all food, as discussed during the inspection. Dented cans are being stored on shelving outside the dry goods storage area. It is recommended that this area be labeled as such so employees do not confuse the location with ready to use cans.

Also, please complete cooling logs for meats and other solid type potentially hazardous foods. Cold holding temperatures measured were acceptable. Discussed breakfast buffet and pasta buffet service.
