Discussed the following items with operators: Bare hand contact prevention with ready to eat foods, adequate cooling and reheating methods, hot/cold holding requirements, shelf stable products, ill food worker policy. Note: Please ensure eggs used for baking are properly stored cold and only amount needed for baking are left out for prepping.

The truck did not appear to be well set up and prepared for this event and able to quickly heat a large amount of chowder. The serving table/line also needed to be better prepared for such an event.
