As a reminder, the pH of each prepared batch of sushi rice must be measured and recorded in a log and made available during inspections. Must correct all violations, except 12B and walk in cooler floor, no later than May 6, 2014. Must correct 12B immediately. Must repair walk in cooler floor so the floor surface is smooth and easily cleanable no later than September 30, 2014. A reinspection may take place on or after May 6, 2014. Temperature of several food items were taken inside sushi bar cooler and they ranged from 45 degrees F to 46 degrees F. Must monitor this cooler and if temps exceed 45 degrees F, this cooler cannot be used. No battery in pH meter used to check pH of prepared sushi rice. No prepared sushi rice was present at time of inspection. Must replace battery immediately.
