It is strongly recommended the operator reinstitute the written food safety plan used in the past. This plan had all the concepts needed to establish and maintain safe food handling procedures. A person other than manager (Joe) should be given the knowledge, authority, and responsiblity to ensure proper daily procedures with a focus on Critical Control Points, and cleaning.

Operator must produce sushi in accordance with approved plan underr seperate cover. A future office conference may be requirrred. 11-30-15: On 11-27-15 a reinspection was conducted at the facility by Jason Redmond, PHS. The adulterated food product had been removed from it's encasement in ice and properly discarded. The operator has placed a shelving unit in the prior location of the adulterated food product to help ensure future compliance and prevent contamination. The operator has a refrigeration technician coming to look at the refrigeration unit and is exploring upgrades.
