01/23/2014InspectionMust correct all violations no later than February 6, 2014. Must send Corey DiLorenzo corrective actions taken to all cited violations in writing no later than 2/6/14. Comments only: At 1:15PM I checked the temperature of sushi located at cold buffet line using a metal stem probe thermometer and received a temperature of 47 degrees F. Staff said sushi was made today and placed on buffet line at 1:00PM. A time of 3:20PM was written as a discard time next to the tray of sushi. Operator previously agreed to use time as a public health control since the cold buffet line was not capable of cold holding potentially hazardous foods at or below 45 degrees F at all times. Once again provided education to the food workers and owners and they corrected the discard time to reflect 3:00PM. I saw a food worker remove a tray of kimchi from the cold buffet line and place it into a cooler around 1:30PM. The Kimchi had a discard time of 3:45PM written next to it. In discussion with the owner, Amy Chen, the kimchi was prepared yesterday, leftin cooler overnight, then brought out of the cooler and placed on buffet line around 12:30PM today. The kimchi was removed from buffet line because it wasn't busy. Amy said it is typical practice for her to place the kimchi on and off the buffet line depending on how busy they are. Explained to Amy that this practice must cease immediately. Provided education. All potentially hazardous foods that are being tracked by using time as a public health control must remain on buffet line the entire two hours and all leftover food must be discarded after two hours has passed. Food items cannot be brought back and forth from the buffet line to the refrigerator. The temperature of the kimchi was recorded at 44 degrees F at 1:30PM. Kimchi remained inside the cooler at the end of my inspection.
