Trays are transported in insulated cooler type packages. Trays are placed into bath heated by sterno. There is no means of reheating food at this location over than the sterno. Today's lunch is Sausages and peppers (168 F) Beets (133 F) and Scalloped potatoes (181F).

11/20/2013 | Inspection | The refrigerator compartment of the refrigerator/freezer had an air temperature of 38 degrees F. The facility does little food preparation aside from cutting up pies and making coffee. The prepared food is delivered to this site and cold food is held in the refrigerator/freezer until served and the hot food is kept at 140 degrees F or above by heating with stereo. If any hot food is delivered at less than 140 degrees F., the operator quickly reheats to 165 degrees or higher and holds it at 140 degrees F. Could not temp any delivered food because I arrived after lunch was finished and all of the food was gone. The operator cleans of the food trays and serving utensils and these items are sent back to the food prep facility to be washed. They have a single bay sink available for washing dishes and their hands. REPORT needs to be MAILED. |
