Operator indicated that the food service had shut down for the month in February during which time the kitchen plumbing had frozen briefly. All repairs were made and water restored before reopening in early March. |

A previous inspection noted an unfinished basement is being used as storage for the food service. Three freezers are found on pallets in one room and second room is used for wine and beer storage. Beverages are stored on wire shelves. Plaster & wooden lathe has been removed from celling, no crumbling plaster is observed. Owner has plans to further finish or seal bare wood in the celling as much as practical while closed down. Crushed stone floors have been covered with tarps which can be swept and mopped clean, no moisture issues are noted during inspection. |

At time of inspection his diswasher initally did not have over 10 ppb disenfection level. After he ran the dishwasher a few times he was able to get it up. He had recently had the rinse cycle on the diswasher altered and I think this was diluting the disinfection levels. |
