09/11/2015Inspection4A--Bucket of sanitizing solution was ""bleaching out"" the inspector's chlorine test strip, indicating that chlorine levels are extremely high. Owner diluted bucket to ~ 100ppm cl. corrected. 6A--Rice found in the kitchen hot hold unit and the rice found in the buffet table were measured at 105 degrees F and 125 degrees F respectively, using the inspector's digital thermometer. Owner stated that rice was prepared an hour prior to this temperature being taken. Owner reheated rice to greater than 165 degrees to be put back in hot hold and buffet table to maintain temperature at greater than 140 degrees F. Corrected. 8C--Clean glassware found stored on cloth napkin on storage rack. 8D--Plastic spoons/forks are being stored in different directions in baskets on the buffet line which does not prevent bare hand contact with food contact surfaces of utensils. 10B--Bare wood pallets, rusted shelving in walk-in cooler, and cinder blocks in kitchen are not smooth and easily cleanable. 11D--Most gaskets on cooler/freezer doors throughout kitchen are not clean. 14B--Door to back storage area does not create effective control against insects/rodents. 15A--Walls and floor behind dish machine are not clean.

09/22/2014Inspection5C - At 1:35 inspector temped a pan of chicken next to cook line and found it to be 78 degrees. AS per cook the chicken had benn cooked about an hour previous and was allowing it to cool. Proper cooling procedures were reviewed with owner. Food that is cooling must go from 120 degrees to 70 degrees in 2 hours and from 70 degrees to 45 degrees in four hours. Chicken was placed in cooler. Corrected. 8C - Clean dishes, pots and pans were stored on floor in closet next to cook line 10B - Floor freezer in hallway outside kitchen has excessive ice build up and does not form a proper seal 14B - Doors to outside do not form tight seal withdoor frame. Could allow insects and rodents access into establishment 15A - Floors in back storage areas are worn and not smooth and easily cleanable. Repeat.. Floor in walk-in cooler across from dishwasher has debris accumulated under the shelving 15B - Light shields missing from storage area next to cook line and walk-in cooler across from dishwasher

05/29/2009Inspection4A--Raid Insecticide(1can) found in basement storage. Voluntarily discared. Explained they must use a licensed applicator for this purpose. Corrected. 5A--Walk-in cooler behind establishment measured an ambient air temp. of 54 degrees using inspector's calibrated thermometer. Inspector then used his calibrated food testing thermometer to measure the temp. of each and every product in cooler--they all ranged from 49 degrees to 52 degrees. Raw vegetables and fruits were saved, all other product was volutarily discarded. Corrected. Owner stated that he had shut off the circuit to the Air Conditioner and was unaware that same circuit controlled the walk-in cooler due to the cooler only being a couple months old. Circuit was turned back on. 8A--Product found stored improperly, not stored >= 6"" off of floor or on easily movable carts or pallets to make floors easily accessible for cleaning. 9C--Cook was not wearing a hair restraint while cooking. Corrected. 10B--Bare wood and bare concrete surfaces in back storage and basement storage, not smooth and cleanable. 12D&12E--Women's room--toilet paper not in dispenser, no hand drying device. Kitchen hand wash sink missing hand drying towels. Men's room missing toilet paper. Hand drying device in womens room was corrected when power to walk-in cooler turned back on. That part is corrected. 15B--Lighting in basement and in walk-in cooler out back are not shielded.
