11/24/2015InspectionAll violations with exception of floor repair to be corrected by 12/21/15. Contact this office via email with corrective action list and time line of compliance for floor repair. Any questions can be directed to this office via email or telephone. Currently facility vacuum seals several raw food products as permitted. As per 2012 approval, only raw products can be vacuum sealed. Vacuum sealed products are limited to items outlined in approval letter, and can be stored refrigerated for no more than 14 days, or frozen. Products should all be dated to ensure products are used quickly or discarded after 14 days.
No violation noted during this evaluation. 01/31/2015InspectionChowder Fest, outdoor service. The chowder temperature measured 150 degrees F, Good. Per interview large amounts of chowder were made ahead over a few days, cooled with ice wands then transferred to food grade 20 gallon pails. One of those was temped in the walk-in cooler at 42 degrees F, Good.
