12/30/2013 | Inspection | As we discussed, the food prep sink will be changed to the bay at the far left with an indirect, one inch air gap installed since the current one spills over / fills up from the garbage disposable. If you obtain a quaternary ammonia (QAC) sanitizer as discussed as another option to using bleach water solution, then you will need to obtain QAC test strips to test the strength of that sanitizer solution. The acceptable range for sanitizer is 50-200 ppm. Recommend labeling, identifying the sinks. Thank you. |
