No illness complaints have been received by Taco Bell within the last week, no employees have been ill within a week prior or since Friday 1/22. Ground beef comes in on refrigerated truck, sealed bags from manufacturer, temps are checked upon delivery. Cold held in cooler, cooler operating at 39 degrees, temps in cooler at 40-42 degrees. Ground beef is reheated in thermalizer to a minimum of 165 degrees and hot held on serving line and hot holding units at 140 degrees or above. Temps in serving line at 145-178 degrees, 38-43 degrees. Thermometers ok, storage ok. Sanitizer ok. Glove usage, hair restraint noted. Store also conducts 2 audits on temps per day with logs kept. |
