04/20/2015 | Inspection | During the inspection, the sandwich-board cooler in the kitchen was found to have an ambient air temperature of 44 degrees F. Most TCS foods in the unit had a measured temperature of 45 degree F. Recommended to the operators that these foods be moved to a different cooler unit until the cooler temperature can be reduced. Several other items were also found at inappropriate temperatures. One bowl of cooked chicken was found in the top of the sandwich-board cooler at 55 degrees, one large pot of sauce was found on the stovetop at approximately 110 degree F and one large pot of cooked beans was found also on the stovetop at approximately 125 degrees F. Operators indicated that all of these foods are for personal consumption, not for service, and that one of the staff will remove them from the establishment we she leaves. |
