Using a metal stem probe thermometer, food items in top,section and inside this cooler measured from 44 to 47 degrees F. Ryan moved all food items that require refrigeration to the walk in cooler immediately. Do not use this cooler to store foods that require refrigeration until it is serviced and can cold hold foods at or below 45 degrees F at all times. All remaining violations must be corrected no later than 2/20/15. 11/07/2005Inspection5A - Raw chicken breast temped at 48 degrees F, raw steak temped at 50 degrees F, raw hamburger patties temped at 52 degrees F, and raw shrimp temped at 48 degrees F inside the ""Low Boy"" cooler unit located under the main grill at 3:00 P.M. Manager, Steve Sparks, said all the above mentioned food items were taken from the walk in cooler and placed into the ""Low Boy"" cooler unit at 12:30 P.M. today. All of the above mentioned food items were voluntarily discarded immediately. No potentially hazardous food items are to be placed in the ""Low Boy"" cooler unit unitl it can maintain food temperatures at 45 degrees F or less.
