- 229.164 (f) (2) (A) (i) (I) separation of raw/ RTE. Store raw animal product under ready-to-eat foods. Storing raw animal product over ready-to-eat vegetables. Raw animal foods should be stacked according to cooking temperature. Generally this is poultry, beef, pork, fish in assccending order. Ground products have a higher cooking temperature than whole products. And should be placed in the stacking accordingly. This was corrected durinig the visit.

Raw product should be stored separately by species, or in stacking order by cooking temperature, the highest below the lowest. This is generally poultry, beef, pork, and then fish. Comminuted, ground, meets have higher cooking temperatures than whole meats wind must be placed properly.
