Hose connected to faucet at mop sink. No vaccuum breaker installed. Ensure that a vacuum breaker is installed if a hose is to be connected at faucet. Employee explained that since the time grease traps have been installed, back up issues occur when washing dishes. water comes up into sinks, that are used to wash fruits and vegetables. Ensure that clogging issue is corrected immediately to avoid contamination of food and water lines.
sanitizer should maintain at 50-100ppm. Test strips should be available at all times for proper maintenance.

Observed steamed broccoli in the hot hold unit at 86F degrees. Manager stated the broccoli is cooked then put into the hot hold unit, then is again reheated prior to being served. After broccoli is steamed it must be immediately served or held at 135F degrees or above until served. If the broccoli is not held at 135F degrees, a time and temperature log must be kept and any leftover food after 4 hours must be discarded.
