- Ensure food contact surfaces of equipment and utensils are clean to sight and touch. Ensure racks and bins used to store clean utensils are cleaned and sanitized. Ensure plastic linners stored on dish racks are kept in good condition and are replaced when no longer smooth and no longer in good repair.
- Ensure good hygienic practices. Ensure employee glasses are stored on a non food contact surface. During inspection employee glasses were observed being stored on a cutting board where food prep was being conducted. This item was corrected on site immediately.
