  • Establishment uses small cooler for cold holding however potentially hazardous foods not at proper holding temperature of 41F. Completely fill cooler with ice and use minimal amount of food in cooler and leave majority of food in reach in cooler where temperature is regulatated.
  • Chrizo not at proper hot holding temperatur of 135F. Kitchen manager was instructed to reheat chrizo to 165F then place in hot hold or properly cool down with ice. 229.164 (o) (6) (A) PHF>135.

  • 229.164 (f) (2) (A) (i) (I) separation of raw/ RTE. Observed eggs and vegetables not separated properly in the refrigerator. Proper storage of potentially hazardous foods is based on cooking temperature.
  • Establishment has a back up at drain in the kitchen at 2 drains. Water at one drain is not going down and water is at another drain is rising. Contact a licensed plumber for assistance.

  • 229.168 (i) (1) (A) employee medicine. Place employee medications in an area away from food prep and storage areas. Observed employee medication in container of chips/tortillas.
  • 229.164 (o) (4) (A) (i) - Cooked PHF. All potentially hazardous foods must be cooled properly within 6 hours. Beans prepared the day before not at proper temperature of 41F and cooling process had exceed 6hrs. Observed cooked Chrizo (125F)in refrigerator with no cooling method in place. Separate bulk, dense foods into smaller,shallow containers and utilize ice baths.
  • Barbacoa observed in cold hold unit (ice chest)not at proper cold holding temperature of 41F. All potentially hazardous foods must be held at 41F or below.

Employees must drink from clean closed beverage containers with cleans hands. EMPLOYEES WERE FOUND WITH OPEN DRINKS IN KITCHEN AND ON WORKING LINE.
  • Label is absent and descriptive statement. ALL BULK CONTAINERS WERE FOUND WITHOUT LABELS STATING THE CONTENTS OF THOSE CONTAINERS. (EX: FLOUR, RICE)
  • Use 3 compartment sink for proper manual ware washing. AT TIME OF INSPECTION THE LAST COMPARTMENT (FAR LEFT) HAS BLEACH AND WATER, THE MIDDLE HAD SOAP AND WATER AND THE OTHER COMPARTMENT (FAR RIGHT) WAS FILLED WITH DIRTY DISHES. TO CORRECTLY USE THE 3 COMPARTMENT SINK DO AS FOLLOWS: 1ST COMPARTMENT IS "WASH" WITH SOAP & WATER, 2ND COMPARTMENT IS "RINSE" WITH ONLY WATER, THE 3RD COMPARTMENT IS "SANITIZE" WITH A MIXTURE OF BLEACH & WATER (1CAPFULL OF BLEACH PER GALLON OF WATER, 50-100PPM).
  • Your food establishment permit is currently expired. You have 10 days to obtain a valid permit. THIS ESTABLISHMENT HAS 10 DAYS TO RENEW THE FOOD LICENSE. YOU WILL HAVE TO COME IN PERSON TO 1901 S. ALAMO TO RENEW THE FOOD LICENSE. IF YOU HAVE ANY QUESTIONS PLEASE CALL 207-0014.
  • PROVIDE THERMOMETERS IN ALL COOLERS/REFRIGERATORS.
  • No Heimlich poster posted. PROVIDE A HEIMLICH MANEUVAR POSTER IN RESTAURANT.
  • During the hand washing procedure the employee used soap but did not use vigorous friction in proper area of the hands and arms for 10-15 seconds. Employees must follow proper handwashing procedure in between tasks by washing with soap and hot water for 20 seconds and dry with paper towel. INSPECTOR SAW TWO DIFFERNT EMPLOYEES WASHING HANDS, BOTH DID NOT WASH FOR 20 SECONDS AND ONE DID NOT USE PAPER TOWELS. ALL EMPLOYEES MUST WASH HANDS PROPERLY WITH WARM WATER AND SOAP AND DRY WITH PAPER TOWELS. THE ENTRE PROCESS SHOULD TAKE 20 SECONDS.
  • ONE PERSON ON DUTY DURING ALL HOURS OF BUSINESS MUST HAVE A FOOD MANAGERS CERTIFICATION AND BE ABLE TO SHOW THE INSPECTOR PROOF.
