229.167 (p) (5) improper use of sinks. Upon arrival all sinks were being used to hold plants. During breakfast time sinks must be available for frequent handwashing, and three compartment sink must be set up to properly clean wares utilizing the three step process of washing with warm soapy water, rinsing in clean water, and sanitizing utilizing a solution of bleach or quat sanitizer.
When questioned, employee responsible for cleaning and sanitizing food prep surfaces and wares could not demonstrate proper technique for washing, rinsing and sanitizing wares and surfaces. Determined bleach is used for sanitizing but there is no method to measure or test to ensure proper ppm.
