- All refrigeration and freezer units must be provided with food-grade shatterproof themometers.
- Quaternary ammonia being used as a disinfection for food contact surfaces found over 400ppm. Quaternary ammonium must be used according to manufacturer's instructions. Cleaning solution used to clean floors in warewashing area must not be sprayed onto floor where it may com into contact with clean wares on shelves.
