Single-use gloves shall be used for only one task such as working with ready-to-eat food or with raw animal food, used for no other purpose, and discarded when damaged or soiled, or when interruptions occur in the operation.
  • 229.166 (i) (1) (B) HWS improper use. Observed ice from beverage that was dumped in rear hand washing sink. A hand washing facility may not be used for purposes other than hand washing.
  • 229.167 (e) (3) (A) no towels. Observed no paper towels at rear hand washing sink. Supply every hand washing sink with individual disposable towels.
  • 229.163(b) Demonstration of Certification. PIC could not successfully demonstrate required certification. A Certified Food Manager is present at all times during operating hours.

  • 229.163 (h) (9) contaminate gloves. Observed employee open refrigerator and open package of ham with gloves on and then continued to slice ham in deli slicer with same gloves. Employees must follow proper handwashing procedure and don new gloves in between tasks.
  • 229.163 (n) (1) eat.drink.smoke. Observed employee's open/eaten cookie stored on food prep table next to cookies being packaged. Employees must not eat, chew, drink from an open cup and use tobacco while in the food service line.
  • 229.167 (e) (3) (A) no towels. There are no paper towels at the deli slicer hand washing sink. Supply every hand wash sink with individual disposable towels.
  • 229.168 (c) (1) toxics stored. Observed leaking sanitizing bucket stored on shelf next to boxes of packaged bread. Ensure all toxic items are stored below and/or away of food, equipment, utensils, linens, and single-service and single-use articles.
  • 229.165 (n) (1) (D) (v)equipment dirty. Observed "in-use" knife stored improperly in between crack of cold hold unit lids. Ensure all "in-use" utensils are stored properly when not in use.
  • Ch 13, Art II, section 13-26 Display permit. Permit and previous inspection were not posted. Post most recent graded inspection report and current food establishment permit in customer view.

  • NOTE: (IAW the COSA Municipal code chap. #13) during the establishment’s hours of operation a Certified Food Manager with a valid Health Department Certificate, both must be present. Once a valid Food Managers Certificate is obtained, proceed to 1901 South Alamo (DBSC) Health Dept. desk with the certificate to purchase ($15.45) a Metro Health certificate.
  • A direct connection between sewage system and drain originating from equipment which food, portable equipment or utensils are placed has been found and documented. Install an air gap (1- 1.5 inch space between the ice machine drains and the floor drain) of the drain line between the food handling equipment and the sewer line. NOTE: Presently the drains are positioned inside the Utility basin below the water line.
  • 229.167 (e) (3) (A) no towels. Hand wash station has no paper towels. Supply each handwash station with individual disposable paper towels.
  • 229.165 (d) (1) (B)free of breaks, cracks. Discard and or replace damaged equipment. -Damaged rubber spatulas.
  • 229.165 (m) (1) (A)not clean. In use utensils dirty(rust on knives and cutlery rack). Assure Food contact equipment is smooth,easy-cleanable and in good repair. Clean/sanitize food contact surfaces.
