- Cheese, ham, bologna, and hot dog wieners in a retail refrigerator were at temperatures between 45-47 degrees F. The manager on duty indicated that these items were placed in the reach in coolers between 8 am to 9 am. Remove these items from the reach in coolers immediately and ensure that these items cool to below 41 degrees F by 12 pm today. Ensure that retail refrigerators are not over-packed. Potentially hazardous food must be held below 41 degrees or above 135 degrees F unless the food is being cooked, cooled, used immediately in prep, or when time only is being used as a public health control.
- At time of inspection there was not at least one employee available that was food manager certified. Establishment has one month to enroll employees in food manager classes so that there will be a certified food manager at every shift that potentially hazardous food is handled and or packaged. Failure to have a certified food manager available during the next regular inspection may result in the owner and or operator of this store receiving a citation.

- 229.163 (n) (1) eat.drink.smoke. Observed employee food, drinks, and a coffee pot being stored in food prep areas. Employees must eat, chew, drink from an open cup and use tobacco products in designated areas only.
- Found several torn or compromised packages of frozen food available for sale and in back storage. Do not sell or store packaged food that has tears, breaks, or other similar imperfections in its packaging. Food employees voluntarily discarded all packaged food items that had tears, rips, or holes in its packaging.
- 229.166 (h) (1) (A)HWS not convenient. The hand washing sink in the meat cutting and packaging area was not plumbed; waste water from this sink drained directly on to the floor. This sink must be repaired within 10 days; failure to make the necessary repairs will result in the establishment being forced to cease all meat cutting and packaging. Until this sink is repaired employees must wash hands at the hand washing sink in the back storage area.
- 229.167 (p) (11) (C)insects/pests not minimized. Observed ants in the case where baked goods are kept. Eliminate the presence of insects by using any approved means and discard all exposed food in this case immediately.
