Alternate sinks are available for employee use in the interim.

- 229.166 (i) (1) (B) HWS improper use. Handsink 1 had a plunger and peanut shells, handsink 2 had dirty utensils, handsink 3 hot water turned off.
- 229.164 (f) (2) (A) (iii) cleaning / sanitizing. Cutting boards and knifes need to be cleaned and sanitized between use. Do not place dirty knifes on magnetic strip with clean knifes. Replace cutting boards when they are no longer smooth and easily cleanable. Do not store clean utensils on front of paper towel holder and hand sink in bar area.
- All mechanical ware washing machine temperature(s) not at 180?F. Machine found to be rinsing at a temperature of 55 - 60 degrees F. Manager shut down dish machine and called for repair. During repair all dishes that were washed in machine and additional dishes will be washed in 3 compartment sink. Employee set up sinks and tested Quat sanitizer at 300 ppm.
- Quat ammonia sanitizing solution temperature off required levels. Sanitizing solution at bar less than 50 ppm. Bartender was diluting but has now added Quat to 200 ppm.
- No Certified Food Manager on site. Repeat violation. Am ordering Food Handler Training for all employees.
- 229.165 (m) (1) (A)not clean. Floors, walls and equipment must be cleaned and sanitized to remove food debris and mold growth.
