- 229.165 (m) (1) (A)not clean. Insure that utensils are properly cleaned after each use. Observed two dirty knives attached to knife holder on wall, ready for use, by the next person. Also observed pair of tongs sitting inside container of water with celery slices. All food surfaces (tongs) must be kept clean and dry.
