- Except during prep, cooking or cooling or when time is used as a public health control, potentiallly hazardous food shall be maintained at 41 degrees F or below. Observed several PHF food items* country sausage at 60, chorizo at 58, cooked picadillo at 58, cooked carne guisada at 50, cooked chiccarrone with sauce at 50 all condemned.
- PHF that is cooked to proper temperature and for the specified time shall be at 135 F or above.
- Food handlers shall keep hands clean and wash between tasks in water at least at 100 degrees F by vigorously rubbing together the surface of lathered hands/arms for at least 20 sec and rinsing with clean water. Followed by dry with clean single use towel.* Food handlers changed task without washing hands.
- No employees drinks/food may be stored with establishment food. All dirnks require a lid and to be stored away from exposed food.
- No documentation is maintained at the food establishment that food employees contacting ready-to-eat foods with bare hands utilize two or more of the following control measures to provide additional safeguards to hazards associated with bare hand contact using double hand washing.
- Refrigerated, ready-to-eat food not properly marked with a use by date.
- 229.167 (e) (2) no soap at hand sink.
- Insects in establishment and no bait stations or other control devices used.
- Use proper methods to wash dishes including air dry.
