No paper towels at hand washing station. Ensure to provide paper towels at hand sink at all times.
Observed bottle of Lysol being stored on floor next to bottle of chamoy. Ensure to store all toxic chemicals in an area designated and away from food and food contact surfaces, to prevent cross contamination.
Certified Food Manager was not present. Establishment has 10 days to obtain certified food manager license to avoid citation/reinspection fees. A certified food manager must be present at all times of operation.
Observed drain pipe from raspa shaver connected to drain pipe of three compartment sink .Ensure there is no cross connection between both pipes in case of backup, to avoid contamination of water source at raspa shaver.
Grease trap was leaking sewage onto floor in storage room. Ensure to have grease trap corrected and repaired by licensed plumber.
Observed dish ware (spoons next to soap, knives stored between wall and 3 compartment sink, etc) to be dirty. All dish ware and utensils should be properly washed and sanitized, air dried and stored on clean surfaces.
Observed multi use cloth towels laying on prep tables near hamburger condiments. Ensure that if cloth towels are to used for wiping areas down, that they are stored immediately in sanitizing solution (ex. bleached water at 50-100ppm).
Observed sanitizing solution in red pails to read too high of concentration of bleach. Ensure that sanitizing solution has a concentration of 50-100ppm.
