- OBSERVED SPRAY BOTTLE AT WAITRESS STATION TO NOT BE LABELED. BOTTLE CONTAINED BLEACH, SOAP, AND WATER. BLEACH CONCENTRATION WAS ABOVE 100PPM. ENSURE THAT ANY SPRAY BOTTLE STORING A TOXIC, IS LABELED WIHT COMMON NAME OF SUBSTANCE. ENSURE THAT BLEACH CONCENTRATION IS MADE OF BLEACH AND WATER, AND IS MAINTAINED AT 50-100PPM.
- THREE COMPARTMENT SINK WAS SET UP IN CORRECT ORDER. SANITIZING COMPARTMENT HAD A HIGH CONCENTRATION OF BLEACH. ENSURE THAT SANITIZING SOLUTIONS (IF BLEACH IS USED) IS MAINTAINED AT 50-100PPM
- HOT WATER IS TURNED OFF FROM THREE COMPARTMENT SINK, WHEN NOT IN USE DUE TO LEAK. ENSURE THAT HOT WATER IS EASILY ACCESSIBLE, AND THAT LEAK IS CORRECTED.
- OBSERVED CLOTH TOWELS IN KITCHEN AND WATIRESS AREA THAT ARE USED TO STORE UTENSILS, CATCH LEAKAGE FROM STOVE, AND TO WIPE DOWN SURFACES AND DINING TABLES, LAYING AROUND ON PREP AREAS. ENSURE THAT CLOTHS ARE STORED IN SANITIZING SOLUTION IMMEDIATELY AFTER USE. OBSERVED GASKETS TO BE DIRTY/STAINED. ENSURE THAT GASKETS ARE MAINTAINED IN GOOD REPAIR AND THAT THEY ARE KEPT CLEAN AND PROPERLY SANITIZED. OBSERVED DIRTY CLOTH TOWEL ON TOP OF CUTTING BOARD, NEXT TO A WHOLE TOMATOE, AND BAG OF LETTUCE. EXPLAINED TO OWNER VIOLATIONS AND NEED FOR CORRECTIONS.
