- Please ensure that all dishes and utensils are washed, rinsed, and properly sanitized. Sanitizing solution must be a mixture of water and sanitizer (bleach, quaternary ammonium, or iodine, etc.) to properly clean dishes. Quaternary ammonium solution must read 200-400 ppm. During course of inpsection, mechanical warewashing had been removed and staff were using a "sanitizing" spray and not submerging in a sanitizing solution.
