  • Ensure sound condition of food items and food item packaging. Found several heavily rim dented cans in dry storage area.
  • Establishment does not have a three compartment sink. Establishment must install adequate three compartment sink accoring to code by August 1, 2011 or before start of new school year.
  • Ensure single-use gloves are used for only one task such as working with ready-to-eat food or with raw animal food, used for no other purpose, and discarded when damaged or soiled, or when interruptions occur in the operation. Found employee take trash out and return to food handling without changing gloves.

Handsinks shall provide water at a minimum of 100 degrees F and warewashing and utility sinks shall provide water at a minimum 110 degrees F. Found handsink/warewashing sink without hot water. Ensure hot water is provided for within 24 hours to avoid license suspension. [Hot water generation and distribution systems shall be sufficient to meet the peak hot water demands throughout the food establishment (2006. TFER pg 106).]

Sanitizing solution must be a mixture of water and sanitizer (bleach, quaternary ammonium, or iodine, etc.) to properly clean dishes. Quaternary ammonium solution must read 200-400 ppm. During course of inpsection, mechanical warewashing had been removed and staff were using a "sanitizing" spray and not submerging in a sanitizing solution.
