Provide soap and individual towels and label sink as "Hand Washing Sink Only". Ensure one sink is skipped so not to cross-contaminate the ice in the remanding sinks.

  • Observed that a container of meat gravy that was placed in the walk-in cooler on 03/23 was at a temperature of 47 degrees. Observed that a small container of soup placed in the walk-in on 03/24 was at a temperature of 47 degrees F. PHF must be cooled a total of 6 hrs from 135°F to 41°F or less as specified.
  • Observed that cut cheese and lettuce stored in counter top coolers were at a temperature of 50 degrees F. Potentially hazardous food must be kept at a temperature of at 41 degrees F or lower unless it is being cooked, cooled, used in prep, in a hot holding unit that is maintaining a temperature of at least 135 degrees F, or when time is being used as a public health control.
  • Observed that several kitchen employees were putting gloves on their hands before washing them. Employees must perform a double hand wash prior to placing gloves on their hands.
  • Observed that a bin of flour was being stored in a hand washing sink. Discontinue this practice and use hand washing sinks only for hand washing.
  • Observed that the bins being used to store chips, one of the scoops stored in the bulk food bins, and one of the cutting boards were not in good repair. Repair or replace food contact surfaces that are no longer in good repair.
  • Observed that the interior of the ice machine was not clean to sight and touch. Provide for the interior of the ice machine to be cleaned on a more frequent basis.
