- Observed open potentially hazardous food items in the walk in refrigerator, not properly label. Observed numerous containers and open packages of potentially hazardous foods, that are out of their original containers, in the large walk in cooler; none of which contain a proper label. Recommend to label all open items with the following information as required by the Texas Food Regulation: Name of food item, Date of preparation, and Use by Date; or write a HACCP Date Label SOP to use the Day Dot 3 or 5 or 7 day labeling system.
- (1) Observed 1” opening underneath the exit door of the dining room near the kitchen entrance. Recommend to place a door sweep underneath the door to prevent entry of pest. (2) Observed 2 active water leaks underneath the 3 compartment sink in the kitchen. Recommend to repair at once to prevent area from becoming a pest harborage.
- (1) Observed old equipment (i.e. dishwashing machine and reach-in freezer) broken and/or not in use in food prep area. Recommend to remove or discard these items; to prevent them from becoming pest harborage and breading grounds. (2) Observed 2” opening in walls, around vent ducts. Recommend to seal all opens to prevent rodent and insect entry into kitchen.
- Observed that the three compartment sink was not properly set up; during food service and warewashing. Only the washing compartment was set up. Also noted no sanitizer test strips were available in facility. Observed inadequate number of drain stoppers present, to allow for all tree compartment to be filled and used together. Also noticed that no sanitizing pails were set up. Recommend to: (1) Have 3 compartment sink is fully set up during any food service, prep, and operation; (2) Buy drain stopper; (3)Buy sanitizer test strips; & (4) set up sanitizing pails with 2 wipe cloths.
- (1) Observed no visible and/or working thermometers in any of the coolers, hot holding, and cold holding units. Recommend to install a thermometer inside all coolers, cold holding units, and hot holding units, in addition to the outside installed thermometer. (2) Observed that food service staff did not have enough thermometers to measure food temperatures, in different locations of the kitchen. Also noticed that the single thermometer for the kitchen was 20° out of calibration. Recommend that all food service staff be issued and use calibrated and working thermometers for food temperature monitoring.
- (1) Observed expired food permit in facility. Recommend to obtain a new one with in the next 10 days are facility will be closed till a permit becomes current. (2). Observed that no food inspection was displayed or present in the patron area, for viewing. Recommend to place most current inspection report in the patron area for viewing.
