  • Uncovered employee beverage found in kitchen. Employee finished drink and threw cup away. Ensure all employee beverages are covered with a lid.
  • Moldy napkins observed on shelves with cups stored directly on top. Ensure cups are stored on nonabsorbant surfaces.
  • Rusted metal strainers with caked grease hung up with clean utensils and soiled knife and knife holder found on cart. Ensure all utensils are washed, rinsed, and sanitized routinely. Rusted metal strainers will need to be replaced soon.
  • No paper towels at hand sink at time of inspection. Corrected on site.
  • Dead roaches observed on lower shelves and roach egg casings found on a couple upper shelves. Ensure roach bodies and casings are removed. Continue receiving routine pest control and cleaning.

  • Clear rubber hose hanging in warewash sink. **Remove rubber hose.
  • No handsink installed at bar. **Install handsink at bar conveniently located for user and in a location that prohibits contamination of surrounding clean wares or food/drink ingredients by a licensed plumber (provide invoice).
  • Homegrade outdoor insecticide stored next to preparation sink. **Remove all unapproved chemicals from food establishment.
  • Missing thermometers in reach-in coolers and for use of employees. **Provide working thermometers for all coolers storing potentially hazardous food and thermometer with a small-diameter probe to check temperatures of thin masses of food.
  • A multitude of wares stored with dry food debris and accumulated grease (ex: knives, ladles, manual strainer, etc.), food container with bulk food/spices/sauces stored visibly soiled, and dish racks filthy with dark grime. **Clean and sanitize all stored wares, food containers, dish racks, etc.
