- Sanitizing solution not being used for warewashing of tongs and nozzles. Please ensure that utensils are washed, rinsed and sanitized. Chlorine sanitizing solution should have a proper concentration (50-100ppm).
- Ensure that there is an air gap between the ice machine drain pipe and the floor drain. The air gap should measure twice the diameter of the drain pipe. Ensure that the drain pipe is clean and free of mold.
- Observed dirty tongs and surface on which tongs are kept. Please ensure that tongs and the surface on which the are kept are maintained in a clean and sanitary condition.
