Documentation must be maintained at the food establishment that food employees acknowledge that they have received training on bare hand contact procedures.
  • 229.168 (c) (2) toxics above items. Observed sanitizing bucket stored on shelf directly above box of sweetener packets. All toxic items must be stored below and/or away to prevent contamination of food, equipment, utensils, linens, and single-service and single-use articles.

Employee observed not using proper hand washing procedure before they handle ready to eat foods, and not using suitable utensils or single-use gloves to prevent cross contamination. Employees must follow proper handwashing procedure by washing with soap and hot water for 20 seconds and dry with paper towel. After completion of the handwashing procedure be sure to don gloves before handling ready-to-eat food.
