Upon entry, sole handwashing sink in kitchen was obstructed by a cart and covered with a box of produce. 2nd time observed in this state. One bainmarie was not functional, reportedly discovered previous night around 10pm and all PHF's moved to walk-in. Bainmarie currently holding only in-use produce on ice, within temps. Mechanic reportedly coming today. Several buckets of potatoes cut for french fries were stored on the kitchen floor, uncovered, below sinks. Other bainmaries in-temp but missing independent thermometers. Walk-in very crowded due to broken bainmarie. Some produce boxes on the floor, advised to move onto crates/shelving. Unlabeled tupperware items reported used up daily per Juan. Temps ~35. Observed shellfish tags from Nassau Street Seafood. Freezer temp ~15. Kitchen generally clean. Bar area clean, needes paper towels for hand drying. Basement storage generally clean and in order. While unable to check all items, most seemed in-date. Ice scoop on top of dusty machine. Discussed maintenance records w/ owner. Culligan services the water treatment unit. Western Pest Control visits monthly, reportedly no issues. Ecolab services the kitchen and bar dishwashers; no self monitoring of temp or sanitizer levels. Russell Reid services the grease trap. Advised Joe that a NOV would be issued regarding handwashing sink. We also discussed sending day chef for Certification; currently only night manager is certified.
