It was voluntarily discarded by the manager. Also, found crab meat in the walk in cooler that was not labeled at 30F in the walk in cooler. Per manager, HACCP plan, and temperature of food, this food was thawed last night to be used today. Manager promptly date labeled it.
  • Found bulk rice stored under the soap dispenser in the sushi prep area. Do not store food under soap dispenser. Corrected--It was moved to another location. Also, found large ice build up in store walk in freezer where frozen fish was stored. Defrost walk in freezer.
  • Found a bowl being used as a scoop in the white rice. Provide a scoop with a handle.

  • Found unlabeled brown rice in the sushi cooler. It must be labeled with the date and time of onset of cool down. Also, found prepped crab meat and crab salad and other open seafood in the sushi prep cooler that was unlabeled. It must be labeled and used within 7 days. These items were discarded by the manager.
  • Found build-up of debris on floors. Clean the floors.
  • Xiuchai Chen was the only person working at the facility during the inspection. She stated that she is FSSMC certified but left her certificate at home. Your certificate must be kept onsite. Please send a copy to TCHD, Attn: Kim by 6/15/15.
  • No food handler certificates were available at the time of the inspection. See the Illinois Department of Public Health website for a list of available courses.
