In the walk in cooler there was raw hamburger stored over cooked/cooled ready to eat beef. Also on the other side there was chicken stored over beef. Discussed the proper order of how food should be stored in the cooler top to bottom(ready to eat food, seafood, hamburger, chicken). The meat was rearranged. You may want to consider organizing the meat to help avoid confusion in the future. For instance, having 1 rack in the cooler for raw meat only. That way it won't contaminate ready to eat food.
There are rags hanging on the soda syrup shelf. I also found rags in other areas of the kitchen. Discussed keeping them in sanitizer water.
The can opener has buildup in it.
Cups were stacked wet.
The 3-compartment sink leaks underneath. There is water accumulating on the floor as a result. Owner is aware of issue and is trying to work with the landlord to get it fixed. Fix plumbing issue.
The hand sink in the wait staff area had a sanitizer bucket in it, the hand sink in the grill line had a metal scrubber, and the hand sink in the back had a garbage can in front of it. Discussed making sure all hand sinks are accessible. Everything was moved to make the sinks accessible.
The hand sink in the grill line didn't have accessible paper towels or soap. Discussed installing a small paper towel holder for a roll of paper towels.
The facility didn't have completed temp charts since the middle of November. Discussed what would need to be recorded. Please submit 2 weeks of completed temperature documentation to me.
